Paleo. Pancakes. Gluten/Dairy/FODMAP free. Adults. Kids. Can you meld all these info a friendly, delicious result? Yes! These pancakes are super fast, 3-ingredient easy, and delicious. No syrup needed as these are already sweet. (But I promise not to judge if you do add syrup.)
1 ripe banana
2 large eggs
1-2 tbsp blanched almond flour
Mash ripe banana.
Add 2 beaten eggs.
Add 1-2 tbsp almond flour. Less almond flour makes a softer pancake. I prefer more flour for a firmer pancake as its easier for the bear (my son) to pick up and eat.
Pour into a greased pan (coconut oil) on medium to medium-high heat and cook till browned on both sides.
Eat – yum!
